So long as you're patient and careful the one speed kind works just fine.
Derek has had no major disasters as yet, the biggest problem being the fine
drill bits breaking.. hence the need for patience and careful attention to
what you're doing. A variable speed one would probably save you much hassle,
but its not absolutely necessary.

I have a Dremel with a variable control on it (model 395) that runs from
5-3000
0 RPM, and have found it to work well for all of my needs, although the speed
settings are not as accurate as they could be. Dremel does put out a model wit
h a digital readout, and I'd suggest that you might want to invest in one of
thos e rather than a foot pedal setup, since the readout is right on the back
of the tool. It's what I'd have bought if they'd been available when I got
mine. I'v e used mine to good effect with all sorts of materials, although
I've found that for plastics, I prefer using a knife and a file set (except
for drilling) due t o the fact that the Dremel tends to melt the plastic or at
least leave deep grooves when I'm attempting to grind something down. Lower
speeds are better for the softer materials, and the digital Dremel allows for
lower speeds than even mine does, which is a good thing. I've chewed up quite
a few bits in my time, but they tend to be pretty cheap costwise anyway. As
for damaging the material, with the exception of the above comments on
plastic, I tend to damage things less and less as I gain experience with the
Dremel. You might want to consider practicing with it on some "noncritical"
pieces first.:).

I'd go with the vari9able speed if I were you. I've got a not-Dremel
(Ryobi) that is variable and find that you really have to use the lower
speeds for plastics--unless you want a lot of melted stuff flying
around. The higher speeds are good for working on metal. I love all the
attachments, as it lets me work on plastic and white metal/lead and zinc
(for miniatures and conversions) as well as wood (wet navy ships and the
like).
