I would think that just using a regular digital camera would suffice if you have a few laminated A5 or A6 note cards to put next to each unit that had activity with a summary of the results. Take a local area shot after each activation is resolved should be around 20 shots per turn (with a master overhead shot at the start of each turn) and easily converted to a slide show. I'm not sure using video would add much, as it would just be the dice rolling (which can be summarised).
