Assuming a colony has its starship production line up and running (in orbit?),
how many days would it take to build a starship per MASS? 5 days? 10 days?

It depends on the size and sophistication of the facility. However, I use
300 MUcr. times a rating of 1-9 per week.

For a small colony, 300-600 MUrc. per week.

I'd rate shipyards as capable of dealing with Large, Medium, or Small ships,
and FTL capable or not. Then I'd roll 1d6 for tons finished per week per
project.
